This is a monster of a grill pan capable of doing meat, vegetables or fish with simple perfection. It comes pre seasoned, carries no taste in use and cleans up easily. A secret in using for veggies is to heat the pan rapidly, then turn the heat (gas) down to what seems to be too low. With a very light coating of olive oil, it will sear stripes into chilis, tomatoes or even broccoli. It works even better than I thought it would. Forget the low sided square versions unless one of your hobbies is cleaning your stove. This is a great addition to the kitchen. One observation - it is amazingly heavy! Which is why you should add it to your kitchen.
Once hot, it maintains heat, cooks slowly and thoroughly and it even works to dry tomatoes!
If you are in the market for a grilling pan - this is the only one to get.
